HOW TO MAKE A SOUTHLAND
CLUB SANDWICH

There are thousands of restaurants that serve club sandwiches but as far as I know there aren't any that serve them like they are made at The Southland. When I lived in New York City, I once had a taste for a good, old-fashioned Southland club sandwich and I asked my favorite deli to make me one. The guy behind the counter thought I was some nut who had wandered in off the street and actually refused to make it for me. I didn’t want to take no for an answer and they finally told me to get out before they called the cops.

You will need:

Three slices of white bread

Mayo

A slice of ham

Two or three slices of bacon

Tomatoes and lettuce

Toothpicks and pickles for garnish

A very sharp knife

First, slap some mayonnaise on a slice of toasted bread and layer on the bacon, lettuce and tomatoes just like if you were making making a BLT. Now Grill a sandwich-sized slice of good quality ham and melt a slice of American cheese on top of it. Place the ham and cheese on top of the BLT and add another layer of lettuce and tomato. Spread another dose of mayo on your last slice of toast, place it on top and get ready for some real fun. Push toothpicks through each quarter of the sandwich and using that very sharp knife cut it into four equally sized triangular sections. Line the sandwich sections up and pin them together with a couple of more toothpicks, garnish with sliced dill pickles. Sounds easy don't it? Try making one in a 120-degree kitchen with a dull knife while you're trying to cook fifty pounds of catfish and you're all by yourself.  Delicious.
